This one is good for everyone, but especially for the parents out there. Chicken soup is a good thing to make if you have a kid for a couple of reasons. First, apparently it’s medicine or something because you are supposed to eat it when you are sick. And if you have a kid, you are sick all the time. Before we had a kid, I never got sick and Elizabeth got sick even more never than me. Now, in the past couple years, I’ve had that cruise ship thing twice (sucks) and swine flu once (all hype) and a bunch of other minor illnesses.

Second, it’s pretty easy to make and doesn’t take much time. And kids take up a lot of time that you could otherwise devote to making your own phyllo dough or fish sauce or whatever it is people without kids do when. I called this easy weeknight chicken soup, but really I just did that because it would make it come up higher in search results because I think people google easy things a lot. I probably should have called it “Scarlett Johansson hot nude pixxx chicken soup” and really goosed the search engine optimization.

Thin strips of chicken breast are simmered in broth with jalapenos, onion, garlic and lime and then combined with avocado and topped with crisp corn tortilla strips in this spicy soup. I also think it’s really important to have something acidic in there. This recipe has apple cider vinegar, because that’s what we have, but I also really like to use rice wine vinegar (which I only remember we are out of when I go to make something with it). This one also has a splash of madeira, but that is totally optional.

Easy Weeknight Chicken Soup
An easy chicken soup recipe you can make from scratch even on busy weeknights.
  • 1poundor so boneless chicken partschopped into small pieces
  • 2tablespoonsbutter or olive oil
  • 2stalks celerychopped
  • 2carrotspeeled and diced
  • 1medium yellow or white oniondiced
  • 1red peppercored, seeded and diced
  • 1quartchicken brothstore bought or homemade
  • a pint or so chopped mushroomsshiitake
  • several sprigs fresh thyme
  • 3tablespoonsapple cider vinegarmaybe more
  • splash madeiraoptional
  • two big handfuls egg noodles
  • sea salt and pepper to taste
  • minced parsley leaves for garnish
  1. Put a stock pot over medium heat. Once it heats up, add butter or oil and then the onion, carrot, red pepper, and celery. Cook, stirring often, until everything is tender.
  2. Pour in stock and turn heat to high. Add thyme sprigs, chicken, vinegar, madeira, and sea salt and pepper to taste.
  3. Once broth boils, turn heat down to low and simmer for about 30 minutes.
  4. Taste and adjust with vinegar, sea salt, pepper. (Blow on it first! Don’t burn your tongue.)
  5. When you are about 10-12 minutes from being done, add the noodles.
  6. That’s it!

For this Broccoli Cheese Soup with Chicken I started by cooking some diced onions in butter in a large pot.

I stirred in some flour and allowed it to cook, stirring occasionally.

Then I poured in some milk and water, stirring well.

At this point I dumped in some herb and garlic cream cheese and then increased the heat.

I used a fork to break apart some canned chicken and added it to the soup.

I know broccoli cheese soup doesn’t normally have chicken but I love chicken in soup.

Easy Chicken Noodle Soup Recipe

I added broccoli florets and chicken soup base and then left the soup to cook for about fifteen minutes, stirring occasionally.

I removed the soup from the heat and stirred in three cups of grated cheddar cheese.

I used mild cheddar but you could use a stronger cheese if you prefer.

I left the soup to cool for about five minutes before serving.

This delicious broccoli cheddar soup is perfect for warming you up on a cold day.

This soup can be thrown together in about thirty minutes and will serve four as a meal or up to eight as a side.

  • 1/2 cup butter
  • 1 cup onions, diced
  • 1/2 cup all-purpose flour
  • 4 cups 2% milk
  • 2 cups water
  • 8 oz Philadelphia Herb and Garlic Cream Cheese
  • 12.5 oz canned chicken
  • 4 cups broccoli florets
  • 2 tbsp powdered chicken soup base
  • 3 cups mild cheddar cheese, grated
  • 1 tsp pepper
  • 1/2 tsp salt

Instructions

Chicken Noodle Soup Recipe

  1. Add butter and onions to a large pot over medium heat.
  2. Cook for a few minutes and then stir in the flour.
  3. Continue cooking until flour starts to brown slightly.
  4. Pour milk into the pot and stir well.
  5. Add water and cream cheese.
  6. Increase heat to medium-high and stir until no large chunks of cream cheese remain.
  7. Use a fork to break apart the canned chicken and add it to the soup.
  8. Add the broccoli and the soup base.
  9. Allow to cook over medium-high for 15 minutes stirring occasionally.
  10. Remove from heat and stir in grated cheese, salt and pepper.
  11. Allow to cool slightly before serving.
  12. Enjoy!
